Depending on the Nook you have, it may be stored in different places. 

NOOK 1st Edition

1. Use the touch screen to navigate to My Library.
2. Tap My Documents.
3. Select the book you want to read, and enjoy.

NOOK Simple Touch

1. Push the "n" button.
2. Tap Library.
3. Make sure that All is selected from the drop down box near the upper-left corner.
4. Tap the book you want to read, and enjoy.

NOOK Color or NOOK Tablet

1. Tap the up arrow at the bottom of the screen to show the menu.
2. Tap Library.
3. Tap My Files near the top of the screen.
4. Go to Media > Digital Editions.
5. Tap the book you want to read, and enjoy.
